Air dried meat is when you hang a piece of lean meat covered in herbs outside so it tastes better.
When you're are drying the meat make sure it's not in direct sunlight.

Ingredients
lean meat
1 chilli [seedless]
1 capsicum
10 garlic
blend these all together in a blender, keep these in the blender and continue to put the ingredients into the blender
fenugreeck seeds [160 g]
4 bay leaves
1 tablespoon of coriander seeds
1 tablespoon of all spice pimento
4 juniper seeds
1 tablespoon of ground coriander
2 cloves
1 tablespoon of salt
1 tablespoon of sweet smoked paprika
rubbing salt onto the meat |
After 2 days the meat should look wrinkled and the bowl will have juice in it. Pour out the juice and then towel of the meat and wrap it in a towel
Put the meat with the towel on it in the fridge for a day
Unwrap the meat and cover it with the paste you made and then hang the meat in a dry,warm and protected place for 2 weeks [picture of ideal places to hang]
After two weeks, scratch off the paste and bin it.In result you will have delicious, homemade, air dried meat. enjoy! :]
WARNING if it rains , mould might start to grow on the meat. in this case bring the paste covered meat inside scrape off the mould and brush the meat lightly with vinegar, this will stop the mould from coming again and the mould only grows on the paste not the meat.
